Also trying to write a book review but as it turns out, my ADHD’s that bad. What I really want to do is just sit down and eat the most comforty of comfort foods.

What’s yours? Oh, I don’t have comments enabled that’s fine. You can just email me yours.

I could tell you about mine: Chicken & Dumplings. The recipe I had to learn for myself because my mom could never teach me, she’d just push me out of the way in the kitchen & do it herself. So I had to build my own and let me tell you. This thing is amazing.

To make the perfect chicken dumplings, you need to remember the two things: One pot for everything (also makes cleanup so much easier). And just use a biscuit recipe off a can of baking soda. Get out of my mentions if you use canned biscuits.

The Ingredients

The Soup

2 raw chicken breasts

4 cups low-sodium chicken broth

Medium red onion, roughly diced

1 to 2 cups chopped carrots

1/4 cup frozen peas

Seasonings (Salt, pepper, cayenne pepper) to taste

1/4 cup fresh parsley, finely chopped

(I will not debase the deliciousness of this meal with celery.)

The Roux

The roux is the most important part of this recipe. If you mess this up, forget everything else. Don’t burn the roux either — that’s just uncouth.

4 tablespoons butter

3 tablespoons flour

1/2 cup your bovine dairy of choice

1/2 cup cooking booze (white wine, sherry, light beer, cider)

The Biscuit

In case you can’t read the recipe off your baking powder can. Do not roll out the dough, do not cut it into shapes.

2 cups flour

3 teaspoons baking powder

1 teaspoon salt

1/2 cup butter

1 cup milk

The Recipe

Find a nice dutch oven or stock pot. Wash it out. Clean it up. Get it shiny & spiffy. Dump the broth in and the raw chicken breasts, and turn the stove to medium-high. While the chicken is cooking, chop up your veggies.

Boil the chicken through to 74 C/165 F and remove from broth and set on paper towels to drain and cool. Strain the broth into a separate container. Steam your veggies (preferably with the dutch oven/stock pot if you have a steamer basket). While it’s steaming, prep the biscuit dough.

Veggies are done when the onions are translucent. Rinse the crock pot out real quick and start on the roux. Over medium-low heat, start by melting the butter. Get a whisk and start whisking constantly as you add in the flour, tablespoon by tablespoon, until it’s a smooth paste and it’s browning.

Whisk in your bovine dairy of choice, add in your cooking booze (I prefer my homemade cider), then your broth. Season with salt, pepper. I use enough cayenne pepper to get the broth pinkish. That’s when you know it’s good.

Turn the heat to medium-high. Once it starts boiling, tear the chicken into chunks and add it to the soup. Add the veggies. Grab your dough ball, start tearing chunks out and throwing them in the broth.

Once the soup is coming to a boil, tear the dough ball into chunks and add to the soup. Reduce heat and cover, let simmer for 12-14 minutes.

Once done, top with parsley and snarf.

Biscuits for Dummies

In a small saucepan over low heat, add the butter & milk.

Once the butter is completely melted, let cool & then dump into the dry ingredients. Get a fork & mix & mix & mix & mix & mix. Or I guess use a stand mixer.

It should be tacky to touch, but not sticky. If it’s too dry, add no more than a tablespoon of milk. If it’s too wet, the same but with flour.

[7,6
35
post-75","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-dinner","category-recipes","tag-carnivorous
["GET
